Description

We wanted to do something special for our flagship offering, showcasing the variety of flavors and textures that the world of coffee has to offer. As the seed of a cherry that grows on a small shrub, the seasonality of coffee is both obvious and obscured by its constant availability. Second Language flips the script by selecting single-estate and smallholder coop coffees from all over the world at their seasonal peak. From the earthy Indonesian roasts of winter to juicy Kenyan cups of summer, each month you'll have the opportunity to try something new. It's our way of celebrating this quirky little bean.

Try it in a 5-serving sample.

Hario Switch Brew Guide

Coffee: 15 g Water: 240 g at 201°F

  1. Rinse: Wet your paper filter with hot water, then discard the rinse water.
  2. Add coffee: Add your grounds and give the dripper a gentle shake to level the bed.
  3. Preinfuse: With the Switch closed, pour 45 g of water over the grounds. Let them bloom for 30–45 seconds.
  4. Keep pouring: Slowly add the remaining water until you reach 240 g total.
  5. Let it steep: Let the coffee steep, then open the Switch at around 2:00.
  6. Draw down: Let it drain, pour yourself a cup, and enjoy!

Why the Hario Switch?

The Switch combines pour-over and immersion brewing in one clever little dripper. Keep it closed to let the coffee steep in water, then open it to drain through the paper filter. You get the consistency of immersion brewing with the clarity of pour-over, plus plenty of room to experiment.

A Few Things to Play With

  • Grind size: Finer grinds tend to extract more quickly and can bring out bitterness and astringency. Coarser grinds can lead to underextraction, which often tastes sour. Adjust to find your sweet spot!
  • Water temperature: Hotter water generally helps extract lighter roasts, while cooler water can work beautifully with darker roasts, keeping their flavors balanced and mellow.
  • Preinfusion: I find that blooming with the Switch closed helps saturate the grounds evenly and encourages a more consistent drawdown. Try tweaking the timing and see what tastes best to you.
